My husband typically is not the family chef. His specialties--like a lot of guys I know--are omelettes, grilled cheese, and this potato/red pepper/mushroom/onion hash he made up that is really good. Mostly, though, he chops produce and washes dishes, and I cook. It's a combination that works pretty well for us.
However, last week he did develop a new sandwich idea that turned out to be so good that I told him I was going to take a picture of it and post it on the blog. It's called "The Sam Axe," named after our favorite character on Burn Notice, an ex-Navy SEAL turned civilian vigilante of sorts.
This is a vegetarian sandwich that comes together quickly and has a good balance of carbs and protein. Here's the recipe:
The Sam Axe Sandwich
1 slice Panera Bread's tomato basil bread
1 Mediterranean Veggie spinach-chickpea patty (sorry, I can't remember the exact brand name, but we buy these at Costco in the section near the hummus and produce)
1-2 slices havarti cheese
A few slices of red pepper
Hummus (whatever you have -- we used pine nut)
Microwave the spinach-chickpea patty until heated through. Cut the bread slice in half, and spread each half with a little hummus, topped with a slice of cheese and a few spears of red pepper. Toast in a toaster oven (or a regular oven) until cheese melts and bread begins to get crispy. Sandwich the patty between the slices of bread and you are good to go!

ReplyDeleteYes we did. I figure that Michael only eats yogurt and Sam is secretly a vegetarian and only acts all macho to cover it up.
